Two Ingredient Pancakes

Are you ready for quite possibly the easiest breakfast around? Let me introduce to you the two-ingredient pancake. For those with New Years Resolutions, this recipe is paleo, gluten & dairy free. AND no sugar added. You probably have all the ingredients you need stocked in the kitchen! It's also a kid-friendly recipe, so get out those frying pans and whip up some of these tasty treats for the family this weekend! 

Two Ingredient Pancakes


  • 2 medium ripe bananas, mashed
  • 2 medium eggs 
  • {optional} baking powder (just a tiny bit if you want them a little fluffier) 

How To:

  1. Combine all the ingredients in a medium bowl.
  2. Mix well; your choice here to use a fork OR a blender. {I personally use our Vitamix so I can say its not just a (super expensive) smoothie maker and it really gets things blended up well}
  3. Spray pan with nonstick spray and heat over medium-high heat. 
  4. Pour batter into pan {these are a little runnier than typical pancakes, so I like to use the spatula to create a barrier for a quick second so they don't all run together}
  5. Flip pancakes and cook until golden brown (about 30 seconds to 1 minute on each side) 
  6. Serve and enjoy! I personally like them straight off the pan (as does my daughter), but if you prefer syrup and butter, go for it! 

Meal Prep TIP! 

  • Make a double batch and freeze some for a quick and healthy breakfast during the week! I usually double the recipe and will freeze between parchment paper. Just reheat in the microwave for an easy weekday breakfast or snack for the kids!
